Ingredients
- 1 medium shallot, diced.
 - 1/3 cup olive oil
 - 2 tbsp. lemon juice
 - 2 tbsp. lime juice
 - 2 tbsp. orange juice
 - 2 tbsp. maple syrup
 - 2 tbsp. water
 - 1/2. tsp. salt
 
Method
- Place all the ingredients into a jar with a tight-fitting lid.
 - Seal the jar securely and shake vigorously until the ingredients are well combined.
 - Taste the dressing and adjust the flavour by adding more maple syrup or salt, if desired.
 - Use immediately to dress a salad, or store in the refrigerator in an airtight container.
 - The dressing will keep for several days.
